In this view from the scroll you see how the whole arm swings under the violin, with the hand staying in a straight line at the wrist and with no lifting of the left shoulder.

If you just use the hand to cross strings it causes a change in the angle of the fingers to the string, whereas it's more efficient to keep the fingers at the same angle on all strings....
